ROOIBOS SHAKE


  • 500ml Hot, strong Rooibos tea
  • 600ml Vanilla Ice-cream
  • 20ml Lemon juice
  • 340ml Sparkling lemon juice
  • Combine tea and ice cream and beat well.
  • Stir in lemon juice
  • Pour into glasses and fill with sparkling lemon juice

 

GLUHWEIN


  • 250ml Strong rooibos tea
  • 1 Rind of lemon
  • 60g Sugar
  • 1 Cinnamon stick
  • 5ml Ground cloves
  • 500ml Red wine
  • Peel lemon, in a single strip if possible
  • Boil tea, lemon rind, sugar, cinnamon and cloves together until sugar dissolves
  • Add red wine and bring to a boil
  • Remove cinnamon stick and rind
  • Add more sugar if desired
  • Serve with a slice of lemon
  • Makes approx. 5 glasses

 

SOUTH AFRICAN PUNCH


  • Rooibos tea (loose or bag)
  • 160g sugar
  • 1L Orange juice
  • 1L Apple juice
  • 3 cups Spring water
  • 1L Ginger ale
  • Prepare 1.2L of strong Rooibos tea.
  • While tea is still hot, add sugar and stir until dissolved. Combine remaining liquids.
  • Garnish with mint leaves, cherries or apple and lemon slices.

 

CLASSIC BUBBLE TEA


  • 1/2 Cup chilled, cooked large Chinese tapioca pearls
  • 1 Cup crushed ice
  • 1 Cup Very strong, chilled Rooibos tea
  • 1 Cup Milk, or to taste
  • 1 Cup honey or sugar to taste
  • Place the pearls in a large parfait glass
  • Combine all remaining ingredients in cocktail shaker
  • Shake vigorously until the mixture is frothy
  • Pour into glass and serve with extra-thick straws
